Kebab Koobideh

Koobideh is the yardstick by which every Persian kitchen is measured: fine minced lamb, marinated and pressed by hand onto flat blades, then grilled until the outside chars and the inside stays soft.

We serve two full skewers over saffron rice with grilled tomato and fresh salad — simple, honest and made to order.
